Chicken Stew with Ginseng ("Sam Gye Tang" or "Sam Gae Tang")

Sam Gye Tang or Sam Gae Tang is a traditional Korean chicken stew, typically eaten during the hottest days of the summer. According to Korean tradition, the ginseng in Sam Gye Tang is thought to help detoxify and rejeuvenate the body.

Ingredients:

 1 cornish hen or small chicken

 3-4 roots of ginseng

 4-5 chestnuts ("bam")

 6-7 red dates ("dae choo")

 1/3 cup sweet rice, washed and drained

 8 cloves garlic, peeled

 1/4 inch piece ginger, peeled

 Salt and pepper to taste

Clean the chicken inside and out.  Trim as much visible fat as possible.  Wash rice, ginseng, chestnut and red dates.  Stuff the inside of the chicken with rice and seal.

In a heavy pot, add the chicken, ginseng, dates, chestnuts, garlic, and ginger.  Pour water to cover the chicken.  Bring to a boil and turn down to simmer.

Cook for about 2-3 hours until the bones fall apart.  Skim out the fat on top occasionally.  Season to taste with salt and pepper and serve. 

Ginseng and Beef

Ginseng’s earthy flavor is an excellent accompaniment to meats such as beef.  Enjoy this Korean stir-fry dish which has supportive health benefits to boot thanks to the addition of ginseng.

Ingredients:

Fresh ginseng root, thoroughly cleaned and thinly sliced

1/2 pound tenderloin, cut into narrow strips or chunks

3 or 4 small green onions

soy sauce

Sherry or wine

Sugar

Black pepper

Garlic powder

Vegetable oil

Instructions:

Marinate beef with a mixture of soy sauce, sherry and sugar.  Stir-fry the beef in oil in the pan.  Add ginseng and fry briefly while adding the seasoning of sherry, pepper, garlic powder, sugar, and soy sauce.  Add green onions and cook briefly.  Remove from heat and serve.

Tossed Ginseng Salad

Salads are a great option if you are trying to eat healthfully.  Incorporate ginseng into your health routine with this delicious tossed ginseng salad.

Ingredients:

1 small head of lettuce or cabbage, coarsely shredded

1 fresh ginseng root, thoroughly cleaned and thinly sliced

1 small red or white onion, sliced into rings

1 or 2 green onion stalks, julienned 1″

Several spinach leaves torn into small pieces

Condiments such as soy sauce, sugar, sesame seeds, or black pepper

Instructions:
Combine all ingredients and toss well. Serve with your favorite salad dressing, and/or flavor with condiments of your choice.
